A donut multiple chart can be created from only measures (no dimensions). In this case, the tooltip will show 'undefined'.
A simple workaround is to create a custom dimension or table calculation) with and empty string (" " or "") and add that to the explore. Then this empty string will show up in the tooltip instead of "undefined".
