How do we fix a blank timezone in Looker-generated SQL?

There is a known issue where disabling user-specific timezones can cause this to a Look that was created when user-specific timezones were enabled.

Either enabling user specific timezones or creating the look from scratch with user-specific timezones off should solve the problem.
