Each Column a Different Color
Colors of columns in Looker's column visualizations are determined by series. One way to convert your single measure into a "series" is to pivot on the dimension. Each pivot is its own series and the colors can be set individually.
While you can't individually color columns that belong to the same series, you can leave your feedback with the Product team here and tell them about your use case!
