Best practices for modeling in Snowflake vs LookML?

Hi everyone, 

I was talking with a former Looker user who asked me the pros and cons of modeling in LookML vs the database. 

Specifically around Snowflake’s masking rule ex. Does it make sense to mask things such as patient name or bank account info in Snowflake or is it more optimal to govern out those columns to end users directly in the LookMl? Some end users of Looker would need to see this data while others do not.
