Assign bar colors based on attribute value

Hello.  I am looking to assign the color of bars based on attribute values, within the LookML.  I know this can be achieved with Liquid/LookML for measures and the html tag within the measure definition, but how about with attributes? I haven’t had success as of yet. 

example:

Say I have a stacked bar chart based on the Attribute named Fruit, with the following values: Apple, Grape, Banana.  I want to assign the colors so the bar for Apple is always red, Grape is always purple, and Banana is always yellow.  I do not want to do this by pivoting the chart and using chart options as this is not dynamic.
