Identifying text with apostrophes

When creating a case when statement and referring to text in Looker, if the text has an apostrophe I cant seem to classify it as text:

Case when field = ‘don’t’ as an example it wont pick up that the condition is text. The apostrophe in “don’t” is creating an issue. How do I get around this?

Have you tried escaping your value or using double quotes?

If I use double quotes, then Looker identifies it as a column and not as text. 

Im not sure what you mean by escaping the value? Please could you elaborate.

Can you show us the code with some sample data and also which dialect you use in Looker?
