I have email templates in Google Docs used by various bots. However, words get broken up across lines depending on the user screen size. This results in having to manually limit the length of lines so that words remain intact. Is there are way to prevent this? (Note the word "like" at the end of the first like is split into "lik" and "e" in the second attached image)
When user screen is wider than line length, there is no issue:

Have you tried to insert the text inside of an invisible table (1x1)?
Yes, the templates already use a 1x1 table ๐

I tried to reproduce your situation but couldn't for the life of me(words were never chopped up in the middle). Perhaps it would help if you shared your template.
I made a quick test as well, works just fine.
